Our menu enjoys the old Japanese tradition, but with a twist.
I see a man with knife fingers in the kitchen. Fire, the pot’s on fire. It stops… On a clay plate: rice, fish and small seaweed details. Blowtorch. FIRE! Coloured sauces, tweezers… The coastal breeze mixes with the kitchen scents.I inhale. I see myself as a child in a Japanese restaurant.
I recognize the smells, but these ones are different… new. My dish is in front of me. I try it. Water. Sea water in my mouth, water as I salivate. My pupils dilate, I close my eyes. ‘Another one of the same please’.
