Behind the bar, we create new brews and classic cocktails with a long-standing tradition.
Fruity potions, bitter sparks, aromatic hints. Ice spinning, glasses sweating, water dripping. Purple, orange, green, all blending together… I order another; “this one’s on the house.” I sip it, and it stirs me awake.
La Guelaguetza
In this menu, Japanese tradition and the cultural richness of Oaxaca are in harmony. The precision, balance and aesthetics of traditional Japan reinterpret Oaxacan dances through each cocktail, honoring the origin, ritual and craftsmanship that both cultures share.
Thus, each drink inspired by emblematic dances becomes a bridge between Japan and Oaxaca: an elegant and carefully curated experience where flavor connects two deep traditions.

Sake comes from rice. It's quite fascinating, isn't it? This beverage is considered sacred in Japan and has been consumed by Japanese royalty, samurais, geishas, and monks for many years.
Today, it's enjoyed worldwide. Sake is made from just two ingredients: polished rice and water, and its fermentation process is aided by the koji mushroom. It's believed that sake dates back to the 3rd century, and now, 18 centuries later, you're reading about it.

Mayáhuel is the Mexican goddess of Maguey, better known as agave. She fell in love with Quetzalcoatl, the god who created humans, and they decided to run away together, which incited the fury of the goddess' brothers, who resolved to find her.
During the pursuit, both gods chose to transform themselves into the sacred plant Maguey to avoid detection. Unfortunately, Mayáhuel's brothers discovered it and destroyed it.
Quetzalcoatl regained his form, gathered the remnants of his beloved, and replanted her. He watered her every day with his tears. She could never return to her physical form, remaining eternally in spirit within the sacred Maguey, which today we consume in the form of mezcal.

The eternal debate: Is gin the same as ginebra? Gin originated first in the Netherlands, and years later, due to its tremendous success in Great Britain and further refinement of the technique, it came to be called Gin.
It's challenging to differentiate them since both beverages share the same foundation: juniper plays a key role in their aromatic composition. Juniper is present in their formulation, aroma, and flavor.

Tequila is a spirit drink, that is, an alcohol that is distilled from agricultural material originating from Tequila, in the state of Jalisco.
Legend has it that an electrical storm hit an agave field, causing a fire and subsequent vaporization of the agave balls, creating a sweet-tasting honey in which the natives became interested and discovered that by fermenting them, they obtained a liquor with relaxing power and a euphoric effect when drinking it.
It is thanks to agave musts that, 300 years later, we can have this drink on our tables.
